We love crock pot recipes. They make for easy meal prep. And, when you can put the creation in a mason jar, even better.
?2 cups chopped carrots
?2 cups chopped celery
?1 small zucchini
?1 small onion
?4 cups kale/spinach
?2-3 pieces of chicken [12 ounces]
?2 chicken broth
?2 tbsp. parsley
?black pepper and sea salt to taste
- Chop vegetables.
- Place chicken at bottom of slow cooker
- Add vegetables and broth.
- Add seasoning to taste (we like Himalayan Sea Salt and Pepper)
- Cook on low for 8+ hours [Tip – You will want to shred the chicken around the 6 hour point, or when you get home for the day. Simply remove from crock pot, shred, and return and mix to soak up some more of the juices]
